The Gingko writing software has been discussed numerous times here already, has a new business model, now open source, pay what you want.
Adriano is putting a lot of energy into making the desktop app (Win, macOS, Linux). It is a good, in parts excellent software already. I only hope that people recognise the value and pay for it. The asking price is 45$ but “you can pay less or more”, hopefully it works out.

Payment of $15 (minumum) to $45 is for the desktop. Online subscriptions are pay whatever you want, but are an additional non-zero amount, if I understand right.

Currently there is no syncing between the online and desktop versions, though you can export/import in a clunky manner. Sync is on the dev’s to-do list, but I suspect there might be an upgrade fee for that when/if it comes.

I don’t have bitcoins and I’m not going to give his database my credit card details. I was going to buy the Desktop version (ie ver 2 with offline feature) but won’t until he accepts PayPal.

I don’t know what you’re talking about re Bitcoin. I paid with my AmEx card via Stripe.

He now only takes bitcoin or credit cards on a page which collects data under his domain name and his server or web host.
