I should add that the clean and simple interface of FoldingText is something I would very much like to see in a Windows or Linux application. I guess it’s an issue of Apple-related culture.

I have used the beta for awhile and it looks great. I use Taskpaper for most of my quick lists, and may switch to FoldingText when there is an iOS app. Jesse Grosjean does some great work.
